Spent the weekend in Lancaster with my parents. The highlight? See above. The red velvet whoopie pie is right up there with eclairs from Miss Manon. A sweet obsession for sure. Here is the recipe: Cakes 2 1/4 cups all-purpose flour 2 tablespoons cocoa powder 1 1/4 tsp baking soda 1 tsp salt 1 cup buttermilk 1 tsp vanilla 2 tablespoons red food coloring 1 stick butter, softened 1 cup packed brown sugar 1 large egg Filling 1 stick unsalted butter, softened 1 ¼ cups confectioner sugar 2 cups marshmallow cream (fluff) 1 tsp vanilla Make cakes: Preheat oven to 350°F. Whisk together flour, cocoa, baking soda, and salt in a bowl until combined. Blend buttermilk and vanilla in a separate small bowl. Set both aside. In a large bowl, beat butter and brown sugar on highest mixer setting for about 3 minutes. Add egg and food coloring and mix until well combined. Reduce speed to low, and alternately add flour mixture and buttermilk/vanilla blend in batches, and mix until smooth. Spoon 1/4-cup mounds of batter and place about 2 inches apart on a buttered baking sheet. Bake until tops are puffy, and spring back when touched, about 11 to 13 minutes. Transfer to a rack to cool completely. Make filling: In a medium-sized bowl, beat together butter, confectioners sugar, marshmallow, and vanilla at medium speed until smooth. Assemble pies: Spread a rounded tablespoon of filling on the flat side of one cake. Top with another. Makes about 8 cakes.

oh my goodness!! red velevet anything is my weakness! We are even having a red velevet wedding cake!!! A little treat like these would certainly make my day! :)

actually i take that back, they are definitely better. valentine's day + whoopie pies sounds perfect together (i'm so juvenile). so is the filling cream cheesy? i need to stop myself, i'm going to end up in the kitchen today attempting to make them.

So funny – I made regular whoopie pies for Valentines day for my parents. My Dad loves them. I think the red ones would have been much better though :)

What the hell, man?! Did you make those?! You know this was the source of much delicious cookie controversy during my family's christmas cookie competition. Are whoopie pies-no matter how delicious and red velvet'y-cookies?
