Chocolate Cake with Peanut Butter Icing
I close my eyes, take a bite of this cake and I'm ten years old and in my parent's kitchen. It's called "Old Black Joe" cake. I have no idea where the name came from, but it was the most popular cake in the family.
The coffee makes it super moist, and it's easy to make. I'm sure experienced bakers might gasp when they see that you just dump all the ingredients in a bowl and mix, but I think that's what made this cake a common after school snack.
1 cup of milk
2 cups of flour
2 cups of sugar
3/4 cup cocoa
1/2 cup vegetable oil
2 teaspoons of baking soda
1 teaspoon of baking powder
1 cup hot coffee
Heat the oven to 350. Place all ingredients in a large bowl and use an electric mixer to blend. Pour into a 9x12 cake pan and bake for 35-40 minutes.
I couldn't remember my mom's exact peanut butter recipe, so I used this one from All Recipes, and it was perfect.
